My daughter’s favorite and a must in the menu list for diwali. Simple to make and delicious. High on calories, but you can indulge yourself on rare occasions. Enjoy.
Serves: 4
Ingredients:
Urad Dal | 2 cups |
Onions – finely chopped | 4 tbsp |
Curry leaves – chopped | 10 to 12 |
Green chillies – finely chopped | 3-Feb |
whole pepper corns | 1/2 tsp |
Asafoetida | 1 pinch |
Ginger – shredded/paste | 1 tsp |
Salt | 1/2 tsp |
Oil – for deep fry |
Method:
Soak Urad dal with 4 cups of water for 1 hr. Use Whole urad dal for better quality.
Drain the water and grind the urad dal in the mixer\blender on a low-medium setting. Do not grind for too long (this will keep the batter fluffy). Add 2-3 tsps of cold water if needed. Thicker the batter, better it is.
Add rest of the ingredients except oil to the batter and mix well
Heat the oil. Take a small bowl with a flat bottom. Turn it upside down with the flat bottom facing up. Keep a sandwich ziploc bag on top. Take a handful of batter, roll it lightly and place it on the ziploc bag. Slightly flatten it and make a whole in the middle. Remove it slowly and dip it carefully in the oil. Deep fry on medium-high for 2-3 minutes. Turn it frequently for uniform cooking.
Serve hot with chutney or sambhar.
