I was brought up in Mumbai. I love the city and I love its food. This is one of the classics. It always tops the charts as Mumbai’s local authentic food. This is also the most delicious way to have your kids eat all the veggies.
Serves: 4
Ingredients:
Pav/Dinner Rolls(2 inch square) | 12 |
Potato | 1 big |
Peas | 1 cup |
Carrot | 1/2 cup |
Capsicum\green bell pepper | 1 cup |
Cauliflower | 1 cup |
Onion | 2 |
Roma Tomatoes | 5 |
Oil | 3 tbsp |
Ginger paste | 2 tsp |
Chilly powder | 1/2 tsp |
Coriander powder | 2 tsp |
Jeera Powder | 1 tsp |
Pav Bhaji Masala | 4 tsp |
For Garnishing:
Onion | 1 small |
Cilantro | 1/2 bunch |
Lime | 2 |
Method:
For Bhaji:
Cut and pressure cook potato, peas, carrot, capsicum and cauliflower with 1/2 cup water for 8 mins (After first whistle on low-medium)
Mash the vegetables really well and keep aside.
Heat Oil. Add finely chopped onion and ginger. Sauté till Onion turns slightly brown.
Add chilly powder, coriander powder, jeera powder, garam masala and Pav Bhaji masala. Sauté for a minute.
Add finely chopped tomatoes and salt.
Cover and cook for 6-8 mins till oil floats up. Mash well.
Add the vegetables to the onion-tomato gravy and mash thoroughly.
Garnish with finely chopped onion, cilantro and lemon.
For Pav:
Cut the Pav in half. Butter on both sides and lightly toast them.
Serve with Bhaji.
